Ethnic and Specialty Vegetables Handbook — Changing patterns of U.S. agriculture and the population will influence the next generation’s food consumption. This publication is the result of field trials of new exotic crops. The ethnic and specialty vegetables production project was started at the Univeristy of Maryland’s Research and Education Center, Upper Marlboro facility. The Ethnic and Specialty Vegetables Handbook, first edition, is based on a two-year research program at the Upper Marlboro facility. This first edition provides valuable production guidelines to farmers and any one interested in growing ethnic and specialty vegetables.
